People

I think I would be a little better at blogging if I had a camera with me all the time. I hate to post without pictures so I haven't been posting.

I just wanted to write a bit about how grateful I am for the people in my life. I think that every single person I know has affected me in some way, even if it's just an acquaintance who restores my faith in humanity, or an acquaintance who helps me avoid mistakes by my seeing the results of their choices. And there are so many people who have been such a huge influence in my life. I have so many dear friends who make me so happy just to know them and have taught me so much. I am so glad that Heavenly Father put me in the place or situation to meet them because He knew I needed to learn something.

I am also grateful for the opportunities that have come from knowing certain people. One small example is if not for my cousin Nicole having moved into the apartment she did when she moved to college I would not have met all the amazing people I did when I moved in with her or had all the fun I did. Or if I had not married Mikkel and moved into the ward we did, I would not have the job I do now or the friends I do. For that matter if Mikkel's dad hadn't gotten the job he did and moved to San Antonio all those years ago, I don't think Mikkel and I would have even met, let alone gotten married.

To all the family, friends, co-workers, teachers, leaders, and acquaintances who have been in my life I just want to say thank you for shaping me and helping me become the amazing person I am today!

Cream Cheese Filling/Icing

I thought I'd post this recipe for the cream cheese icing we used on our Brownie Fruit Pizza since I use it for everything!

I originally found it while I was looking for a recipe for cream cheese crepe filling. I like it a lot as a filling but tweaked it a bit for the icing.

Cream Cheese Icing

8 oz Cream Cheese (1 package)
2/3 c. Powdered Sugar (cut in half for crepe filling that is cheesier)
1/2 tsp Vanilla Extract
1 tsp Zest (orange is our favorite, lemon is good, lime is okay)
ground nutmeg

You just blend them all together. Taste it and if it's still too cheesy for you just add more powdered sugar.

4th of July

I wanted to take pictures of our 4th of July but I completely forgot! Sorry.

Mikkel and I started the day with a much appreciated lie-in. He's been sick the past two weeks with a cough/cold and it was nice for him not to get up at 6:30. We didn't sleep in too late though because we had to wash out our truck before we went shopping that day. That was really fun, I'd never done a coin-op car wash so Mikkel was telling me what to do with all the brushes while he scrubbed out the truck bed (he's been doing some stuff with old engine parts so our bed was all oily). I loved covering our truck with the foam that was all different colors!

We then picked up all our people (Gardner, Jessica, Isabelle, and Jon) for a trip to WinCo! I feel kinda silly being so excited to go shopping but it's this cool bulk foods store down in IF and they have really cheap banana chips which I love! And I'm learning to really love buying in bulk, it's SO much cheaper! When my parents come up here I want to take them there because they have a bulk Peanut M&M's which my mother would LOVE.

After that we all took a break and Mikkel finished up his homework while I cleaned the house for our party that night. I've discovered that having people over is a REALLY good incentive for cleaning my house. I'm pretty sure our box/storage room won't get cleaned until my parents come to visit in December : ) Mikkel walked into the bathroom and said "wow, this is so clean, I wish this were my bathroom!" ha ha, so funny...

Our people (plus 1) came back over to our place that evening to have Isabelle's "traditional 4th of July dinner" which consisted of a bucket of KFC, watermelon, and cherries. Gardner and Mikkel decided we needed Purple Drank to go with it so that we could have the stereotypical southern favorite meal. Everything was really good! I ate so much I had to have Mikkel finish off my plate (he's so lucky to have me, right?) and everybody loved the mashed potatoes Gardner and I made! I make fantastic mashed potatoes, just for the record. We ended up watching Batman Begins, I don't know why, I guess Batman does fight for the independence of the citizens of Gotham...either way it was a fun evening and a fun and happy holiday!

Mikkel and Lise's Mashed Potato Recipe

7-9 Medium sized brown potatoes
1/3 cup milk (add more at the end if not creamy enough)
3/4 Stick of salted butter (about 6 Tbs)
1/4 Packet cream cheese (about 2 oz)
A couple shakes of dried chives
Garlic salt to taste
Pepper to taste

After washing, peeling, cubing, and boiling potatoes until they are soft, mix the potatoes and milk with a hand mixer. Cream in butter and cream cheese. I usually taste them at this point and add more milk (or sometimes butter) if the consistency isn't right. Then add the spices until you get it tasting how you want it!

The Great Outdoors

Mikkel found a friend in our ward who really loves to mountain bike (actually, he shares many of Mikkel's interests....it's kinda creepy). Jay told us about a "sweet trail" he likes to do and invited Mikkel go try it out. That meant the wives came along as well and ferried the boys around.

Leanne and I dropped our husbands off at the head of Wolverine Creek Tr. and drove around and down to the bottom to meet them. The first time we picked them up we pulled up to the end of the trail RIGHT as the boys came careening out of the brush. It was perfect timing!

It was a pretty fun adventure and gave me the chance to be out in some beautiful nature. Although it was incredibly windy and dusty because it has been so dry out here. Mikkel said it made things a little tricky when braking because your tires could slide out really easily. He had a few spills, one of which involved him being thrown over his handle bars at high speed and resulted in a nice big scrape. And his helmet saved him from some decent hurt at least twice he told me, not exactly something a wife wants to hear but I'm sure it'll get worse as I have sons. He was properly banged and scraped up so I took him home, cleaned him up, and tended to his wounds. I will say though, it's nice having a manly man to be married to : )

Blogging

So I think it is time for me to start blogging. I never really needed it before because the only people who wanted to know about my life either lived with me or got a phone call from me twice a week. Now that Mikkel and I are married and are busy though, I thought this might be a good way for family too keep up with us. And with my job I have all these snatches of time so I figure it will give me the opportunity to keep this up!

Right now Mikkel is working hard on his degree in Automotive Technology. He has class at 7:30 or 7:45 each weekday morning so for the first time since the mission he is getting to bed early! He stays very busy with classes all morning until 2, work from about 3-6, and homework for a few hours each night. He is fantastic for getting all that done!! On Fridays he is working at a shop just 20 min north of Rexburg to get some experience and to make it easier when he starts looking for prestigious internships. His ultimate goal with all of this is to have his own shop one day where he can do track tuning on amazing cars to make them even more amazing!

I'm working at a call center here in Rexburg right now. It's actually not too bad, they're really good to us here and want us to have fun when we're not on the phones. I have like a minute between calls and so I can write a sentence or two on here between them. I only have one more semester this Fall so I will be graduating this December! Woo hoo! I have been learning to cook a lot better since I have time in the evenings (yay for no homework). And since I've been out of school I've been getting to read so much, it has been wonderful! One of the guys I work with is always like "oh, a new book, eh?" because I've gone through a million of them already this summer.

Mikkel and I live for the weekends! We love sleeping in on Saturday and Sunday (the only perk of having church at 1:30 pm) and just being together. Last night we were planning on making a blanket fort for our date night but realized our chairs are too short. They're a good foot and a half I think shorter than our chairs back in San Antonio (both our mom's bought the EXACT same set of dinning room chairs...) so we ended up not doing that and making brownie fruit pizza instead! It was so yummy and the good news is we have tons of leftovers! Date nights with my husband are the best!!
